This post is not about bringing garden surplus to share with your coworkers. Maybe next year I'll be able to post about that. My garden's not going to provide that much food this year. I'll probably post more about that some other time.
Instead, this is about me wanting to eat better but NOT wanting to cook at home/heat up MY house. Work, OTOH, is in a hotel kitchen. And it's already hot and nothing I do will actually affect that fact one way or the other. So today (the day I'm writing this blog post, Sunday July 1) I'm bringing in a whole bunch of veggies that I want to roast so I can cut them, season them, and roast them - all during slow periods at work - while at work. This week has a federal holiday in it, so there will be LOTS of slow periods at work.
I got permission from the previous sous chef. Hell, he'd have let me use the veggies at work for this. Which is not something I'm going to do. Thus I have onion, carrots, beets, turnips, and two types of summer squash coming to work with me today. I also have two half gallon containers to take the finished products home in. And I'm bringing in the chef knife today, instead of the serrated knife or the boning knife.
It's gonna get real.

It's Zucchini Time!

So ... Zucchini.
I gave 3 to Suz today (and then we went out and picked blueberries, so I have 9 pounds of those to process). And I had half a cooked zuc left, and one whole fresh one in the fridge, and then harvested one more. So my lunch was pasta with the cooked zuc added.
The Chubby Hubby likes to have something hot with his lunches. Often that means leftovers, but as much as possible I steer him to soup. So I made zucchini soup. Well, a vegetable soup that featured a lot of zuc. Three cups water, 4 boullion cubes, one cubed carrot, most a zuc (cubed), and a large handful of dry egg noodles. He was happy. He ate some zuc, so I was happy. There is soup left for tomorrow, so we can be happy again tomorrow.
I may try Suz's recipe of battering sliced zuc, drizzling it with olive oil, and baking it next, because clearly I have to keep coming up with recipes.

Healthy Eating

So it's noon, and so far I've eaten the way .... sigh .... the way I feel I should be eating all the time. Brunch was one small left over cubed baked potato, leftover home-canned green beans, diced onion and red pepper, all topped with a sprinkling of shredded mozzarella, nuked to heat it/melt the cheese.
Cheap, filling, two servings of veggies. I dunno if I can count the tater as a veggie or not - it's certainly not a grain! So I'm on my way trying to get 9 servings of fruits/veggies for the day.

Crunch
Blessings Darlings!
I'm sitting here eating a very healthy breakfast as I type. Freshly made hummus and freshly sliced veggies that I'm dipping into it. This is a change.
I've been eating very badly lately. Like - yesterday, for example. No fruit or whole grains with breakfast, just eggs/ham/white bread, a huge sugary coffee for lunch, and two slices of greasy pizza for dinner. So I'm trying to crawl back to eating ... better. More veggies. More whole grains.
I'm less concerned with what I should NOT eat as much of. If I make it a point to eat good tasting good stuff, I'm hoping that will crowd out the good tasting bad stuff.
I sure wish that cucumbers weren't a dollar each right now. Oh well.

Progress!

I've finally reached a GOOD milestone in my work on improving my eating habits. For the first time .... I bought a big ol' 1 pound box of organic spring mix AND WE ATE IT ALL BEFORE IT WENT BAD.
Salads at dinner for everyone. Salads as lunch or breakfast for me. Salads anointed with hard boiled eggs, or lentils, or leftovers, or whatever. It took work and planning - I'm hoping that this gets more automatic over time.
Next trip to the store I need to remember to get some fresh mozzarella for salads (as well as for pizzas), because Suz had one with that and drizzled balsamic vinegar that was AMAZING when we were out on Monday. And today I'll roast portabellas and potatoes to re-create the salad I had while out ... wait, I'll need some feta for that, so that might wait. I guess I'll just make some more lentils.
No, my weight isn't better. And, yes, the spring mix was in a plastic box, and I have NO idea where they were grown. So it didn't help all of my green and Pagan and Wiccan and health and environmental goals.
